Why Asparagus freshness is so important...

Asparagus contains a lot of sugar at the moment of harvest. As it sits around waiting to be cooked, this sugar quite rapidly begins to form starch molecules, turning a once tender and sweet stalk bland and starchy.

So freshness, and the length of time between picking and eating is hugely important.

Tony Brew of Abbey Farm, Coggeshall, Essex, grows and picks all of our asparagus. It is cut very early on a Friday morning, and our man Gary arrives at around 10am that day to collect it, bringing it back into our depot at around 1pm, it is then available for collection from 2pm, or for home delivery from Friday evening.
