The week to enjoy bycatch: wrasse & nurse hound

An adverse spring tide means we have very little of the better known varieties of fish in yet. But don't let that put you off, as we have plenty of wrasse and nurse hound fillet - good examples of species that might typically be termed "bycatch".

 

They are very good value (£10 / £11 per kg), and will both come either skinned & boned fillet, or (in the case of nursehound) as a trunk (no small bones) and so is very nice baked in the oven, or braised in a casserole).


Top tip to remember with fish: environmentally-speaking, what species of fish you eat is much less important than how it was caught.

 

90% of the fish on offer is caught using trawlers which can be seabed damaging. All our fish from Kernow Sashimi in Cornwall is caught using static nets and lines, and so is sea-bed friendly.
