Forced Rhubarb & its psychodelic stems

Injecting some vibrant pink excitement into aparticularly green period of the British culinary calender, we have the first forced rhubarb this week.


Forcing rhubarb is a peculiar culture - it involves both heat and darkness, sothat the young shoots rapidly extend in a frantic search for light.

 

Originallyit was produced to fill the gap in the desert fruit calendar (prior to coldstorage techniques), but now it is deemed infinitely better than its outdoorcounterpart and is gleefully anticipated at the turn of the year.


Sweet and delicious, it is definitely one to try this week.
