Roasted Patty Pan Squash with Shallots and Herbs
This recipe is a great way to use any type of summer squash, and is a wonderful side dish for dinner parties. Try using rosemary or marjoram instead of the thyme for a different flavor. Prep Time: 5 minutes Cook Time: 15 minutes
Ingredients
½ pound patty pan or other summer squash, cut into 1-inch chunks
1 shallot, sliced thin
1 teaspoon chopped fresh thyme
1 tablespoon olive oil
Pinch of sea salt
Method
Preheat oven to 190c. Toss squash, shallot, thyme, olive oil and salt together in a bowl. Spread onto a sheet pan. Bake 15 minutes, until tender. Serve hot or room temperature.
